Lemon Shrimp with Sautéed Veggies Recipe
Ingredients
- 2 lbs Large shrimp, peeled and deveined
- 1 lemon
- 1/2 fennel, sliced
- 2 zucchini diced
- Corn kernels (removed from 2 cobs of corn)
- 12-15 grape tomatoes sliced in half
- Salt, pepper, garlic powder
Directions
1. Season the shrimp to taste with salt pepper and garlic powder.
2. Sauté 3 minutes on first side and 2 on the second. Add juice from half a lemon to finish them off.
2. Remove from heat and set aside.
3. In same pan, sauté zucchini and fennel for 3-4 minutes. Then add tomatoes and corn. Sauté a few minutes more.
4. Be careful not to cook too long. You don't want them soft. More like a warm salad.
5. Finish the veggies with salt and pepper and the juice from the other half of the lemon.
6. Add shrimp back to pan and serve with Sauvignon Blanc!
