Grilled Lamb Chops and Arugula Salad with Mustard Vinaigrette
Ingredients for Lamb Chops
- Rack of lamb chops, separated into individual ribs, well-trimmed so most of the fat is removed
- Montreal Steak Seasoning to taste
- Extra Virgin Olive Oil
Directions
Season lamb chops with Steak Seasoning using a heavy hand and drizzle with olive oil. Preheat grill so it is hot but not smoking (on my grill this is the medium setting). Grill 4 minutes per side only flipping once. Keep a close eye so they don't burn.
Ingredients for Arugula Salad
- Container of Arugula
- Container cherry or grape tomatoes
- 4 t shallots, finely chopped
- 4 t Dijon Mustard
- 8 t Sherry or Apple Cider Vinegar
- 4 T Extra Virgin Olive Oil
- Salt and pepper to taste
Directions
Combine all ingredients for dressing, whisking in the oil last so it emulsifies. Drizzle over salad.
