Grilled Lamb Chops and Arugula Salad with Mustard Vinaigrette


Ingredients for Lamb Chops

  • Rack of lamb chops, separated into individual ribs, well-trimmed so most of the fat is removed
  • Montreal Steak Seasoning to taste
  • Extra Virgin Olive Oil

Directions

Season lamb chops with Steak Seasoning using a heavy hand and drizzle with olive oil. Preheat grill so it is hot but not smoking (on my grill this is the medium setting). Grill 4 minutes per side only flipping once. Keep a close eye so they don't burn.

Ingredients for Arugula Salad

  • Container of Arugula
  • Container cherry or grape tomatoes
  • 4 t shallots, finely chopped
  • 4 t Dijon Mustard
  • 8 t Sherry or Apple Cider Vinegar
  • 4 T Extra Virgin Olive Oil
  • Salt and pepper to taste

Directions

Combine all ingredients for dressing, whisking in the oil last so it emulsifies. Drizzle over salad.
