BBQ Chicken Skewers Recipe
Ingredients
- 2 shallots, finely chopped
- 1.2 cup ketchup
- 1/4 cup balsamic vinegar
- 1/2 cup water
- 1/4 cup brown sugar
- 2 T soy sauce
- Oil for Saute chopped shallots
- Chop vegetables (whatever your heart desires)
- Olive Oil
- 2 lbs chicken tenders
- Salt, pepper, garlic powder to taste
Directions
1. First prepare the BBQ sauce.
2. Saute chopped shallots in a small sauce pan until softened (I use either cooking spray or a drop of oil). Add remaining ingredients. Simmer until thickened and reduced.
3. Chop vegetables (whatever your heart desires) and toss with good seasons flavor packet and olive oil.
4. Roast in a 425 degree oven until cooked through. I don't touch vegetables the first 25 minutes or so of cooking because I like a nice char on them.
5. First skewer (makes them easier to handle) and then sprinkle chicken tenders with salt, pepper and garlic powder to taste.
6. Spray with cooking spray and grill on medium hot grill 4 minutes on first side and 2 minutes on the other.
7. Coat each side with BBQ sauce and grill 1 minute more per side.
